
I make a batch of these once every two weeks. Aly and I love having them as a grab-and-go breakfast during our busy weekdays and as pre-workout snacks. Have one or two with a juice or smoothie and your energy and fullness will last for hours. It’s jam-packed will all sorts of superfood goodies and tasty to boot!
Beware though! I recommend having these powerballs with water, or a hydrating liquid like juice or coconut water. Do NOT have these with coffee or tea. The chia and flax seeds in these balls expand in your stomach – sucking up the water in your body to create their famous gel-like consistency. This is great because it keeps you feeling fuller for longer and functions as a detoxifier as they run through your intestines. But if you aren’t staying hydrated, these babies will dehydrated you faster than you can say SAHARA.
- 1 cup of medjool dates, pitted
- 3/4 of a cup of raw almonds
- 3/4 of a cup of raw walnuts
- 2 tablespoons of chia seeds
- 2 tablespoons of ground or whole flax seed
- 1 tablespoon of hemp seeds
- 2 tablespoons of cinnamon
- 1 tablespoon of raw cacao powder
- 1 tablespoon to 1 scoop protein powder of choice (I like Paradise's Orac-Energy Protein and Greens)
- 1 teaspoon of coconut oil
- 1 tablespoon of water
- 1/4 cup shredded coconut
- Place all nuts, seeds, cacao powder, protein powder and cinnamon in food processor. Process until a course flour forms.
- Add in dates and pulse until dates breakdown to a crumble.
- Add in coconut oil and water and process until a sticky dough forms and all ingredients are well incorporated.
- Form into 1-inch balls and roll in the shredded coconut.
- Allow to set in fridge for 20 minutes. Store in fridge for up to 2 weeks.
- Drink fluids when having these powerballs to prevent dehydration.
- You can substitute any nuts for the almonds and walnuts. I love pecans and cashews.
- You can replace the dates with a low glycemic sweetener like agave - add a little at a time until the desired consistency is achieved. I personally prefer the taste of the dates to agave.
